This easy Crockpot White Chicken Chili is creamy, hearty, and full of flavor! Made with tender shredded chicken, white beans, green chiles, corn, and a blend of seasonings, it all comes together in the slow cooker with cream cheese for a creamy finish. Serve with Fritos Scoops and your favorite toppings for an easy weeknight dinner.

When you need an easy dinner that practically makes itself, this Crockpot White Chicken Chili is a great one to add to your meal rotation. Everything goes straight into the slow cooker, including the chicken, white beans, Rotel, green chiles, corn, chicken broth, and seasonings. After cooking, shred the chicken and stir in softened cream cheese for a creamy, flavorful chili.
It's an easy meal to prep earlier in the day and have ready by dinnertime. I love serving it with Fritos Scoops for dipping, along with shredded cheese, sour cream, and fresh cilantro. It's hearty enough to serve on its own and makes great leftovers, too!

💡 Tips for Success
- Soften the cream cheese: Let the cream cheese sit at room temperature before adding it to the crockpot. This makes it easier to stir in smoothly.
- Shred the chicken separately: Remove the chicken before adding the cream cheese. This gives you room to stir the cream cheese into the broth until smooth before adding the chicken back.
- Make it your own: Add extra green chiles for more flavor or adjust the seasonings to your liking.
- Serving suggestion: Fritos Scoops are my favorite for serving because they're perfect for dipping into the thick, creamy chili.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
❓ Frequently Asked Questions
Can I use frozen chicken breasts?
For the best and safest results, thaw chicken breasts in the refrigerator before adding them to the slow cooker. This also helps the chicken cook more evenly.
Can I make white chicken chili ahead of time?
Yes! You can make it ahead and store it in the refrigerator. Reheat on the stovetop over medium-low heat or in the microwave, stirring occasionally.
Can I use a different type of white bean?
Absolutely! Great Northern beans are my preference, but cannellini beans or navy beans will also work.
Can I make this white chicken chili spicy?
Yes! Add diced jalapeños, extra green chiles, or a little cayenne pepper to give it more heat.
How do I store leftovers?
Store leftover chili in an airtight container in the refrigerator for 3–4 days. Reheat gently, adding a splash of chicken broth if needed to loosen it up.
Can I freeze white chicken chili?
Yes, but keep in mind that cream cheese can change texture slightly after freezing. Let it cool completely, store in a freezer-safe container, and thaw overnight in the refrigerator before reheating. Stir well as it warms.
