Easy Jambalaya
This easy jambalaya is a one-pan dinner made with smoked sausage, veggies, rice, tomatoes, and Creole seasoning. It’s simple, hearty, and comes together with minimal prep, making it a great weeknight meal.

If you’re looking for an easy jambalaya recipe, this is it! I use smoked Cajun sausage, but you can use your favorite smoked sausage here. Everything cooks in one pan, and the rice simmers right in the flavorful broth and tomatoes, making this a simple dinner with very little cleanup.
I like to taste the jambalaya at the end and add a little more Creole seasoning or other spices if needed. Make it your own!

- 1 lb smoked sausage, cut into rounds
- 1 yellow onion, finely diced
- 1 green or orange bell pepper, finely diced
- 4 to 6 cloves garlic, minced
- 3 cups chicken broth
- 1 (10 oz) can diced tomatoes with green chilies, including the juice
- 2 cups white rice, rinsed
- 1 tablespoon Creole seasoning

Heat a large skillet or Dutch oven over medium-high heat and add the sliced sausage.

Cook the sausage until golden brown, stirring occasionally. While the sausage cooks, chop your vegetables.

Once the sausage is golden, add the onion, bell pepper, and garlic. Cook until the vegetables are softened, about 5 minutes.

Add the chicken broth, diced tomatoes with green chilies and their juice, and Creole seasoning. Stir everything together and bring the mixture to a boil.

Once boiling, stir in the rinsed rice.

Cover the pan and reduce the heat to a little above low. Simmer for about 15 minutes, or until the rice is cooked and has absorbed most of the liquid.

Remove the lid, fluff and stir the jambalaya, then taste and add additional Creole seasoning or other seasonings as desired.
