- Olive oil
- 4 pork chops, boneless or bone-in
- Salt, to taste
- Black pepper, to taste
- Garlic powder, to taste
- 1/2 cup Dijon mustard
- 1 cup chicken broth
- 3 tablespoons butter
- 2 Honeycrisp apples, sliced
- 1 yellow onion, sliced
- 1 tablespoon rosemary
- 1 tablespoon thyme
- Salt and pepper, to taste

Add enough olive oil to coat the bottom of a large skillet and heat over medium-high heat.

Season both sides of the pork chops with salt, pepper and garlic powder. Once the oil is hot, add the pork chops and sear for 3 minutes on the first side and 2 minutes on the second side. The pork chops will not be fully cooked at this point. Remove them from the pan and set aside.

Add the butter to the same pan. Once melted, add the sliced apples and onions. Use a wooden spoon or spatula to scrape the browned bits from the bottom of the pan.

Add the rosemary and thyme and cook for several minutes, stirring occasionally, until the apples and onions begin to soften. Lower the heat if needed to prevent them from browning too quickly.

In a bowl, whisk together the Dijon mustard and chicken broth until smooth.

Pour the Dijon mixture into the skillet with the apples and onions. Bring the liquid to a simmer.

Return the pork chops to the skillet and cook for another 3–5 minutes, or until the pork chops are cooked through and the sauce has thickened slightly.

Serve the pork chops over sweet potatoes and spoon the apples, onions and Dijon pan sauce over the top.

SWEET POTATOES: Wash the sweet potatoes and pierce each one several times with a fork. Place them on a microwave-safe plate and microwave for 5–8 minutes, flipping halfway through, until fork-tender. Cooking time will vary depending on the size of your sweet potatoes. Slice them open and fluff with a fork. Add a little butter, salt and pepper, then top with the pork chops, apples, onions and pan sauce.

- Bone-in or boneless: Either works for this recipe. Just keep in mind that the cooking time may vary depending on the thickness of your pork chops.
- Don't skip the sear: Those browned bits left in the bottom of the pan add so much flavor to the apples, onions and sauce.
- Use Honeycrisp apples: Their sweetness and crisp texture work especially well in this savory dish, but you can substitute another firm apple if needed.
- Watch your heat: If the apples and onions start browning too quickly, reduce the heat. You want them softened and flavorful without burning.
- Whisk the Dijon and broth first: Mixing them together before adding them to the pan helps create a smoother sauce.
