Sheet Pan Creole Chicken and Sausage

This Creole Chicken Sausage and Potatoes Sheet Pan Dinner is packed with chicken, andouille sausage, crispy roasted potatoes, green beans, colorful bell peppers, and red onion. Everything is tossed with olive oil and Creole seasoning, then finished with butter as it roasts for even more flavor.
The best part? There’s very little cleanup, and you can have a complete dinner on the table without spending all night in the kitchen.
I love this recipe for meal prep because it holds up well throughout the week, but it’s also an easy option for dinner one night with leftovers ready for lunch the next day. You can easily customize it with your favorite vegetables and whatever Cajun or Creole seasoning you have on hand.
📝 Ingredients
- 2 lbs red or yellow potatoes, cut into cubes
- 1/2 cup extra-virgin olive oil, divided
- 3 tablespoons Creole or Cajun seasoning, plus more as needed
- 13.7 oz package andouille sausage, cut into rounds
- 1 bag green beans, washed and trimmed
- 2 chicken breasts, cubed
- 1 yellow bell pepper, cubed
- 1 orange bell pepper, cubed
- 1 small red onion, cubed
- 1 stick butter, cut into tablespoon-sized pieces
- Salt, as needed

Preheat the oven to 425°F.

Dice the potatoes and place them in a large bowl. Add 1/4 cup of the olive oil and 1 tablespoon of Creole or Cajun seasoning. Stir until the potatoes are evenly coated.

Pour the potatoes onto a large, full-size sheet pan and spread them into an even layer. Add additional seasoning if needed to make sure the potatoes are well coated. If your seasoning is low in salt, season the potatoes with salt as well.

Roast the potatoes for 15 minutes.

While the potatoes are cooking, prepare the remaining ingredients. In the same large bowl, combine the sliced andouille sausage, cubed chicken, bell peppers, red onion, and green beans. Add the remaining 1/4 cup olive oil and 1 tablespoon of Creole or Cajun seasoning. Toss well to coat everything evenly.

After the potatoes have cooked for 15 minutes, remove the sheet pan from the oven. Move the potatoes to one side of the pan and add the remaining ingredients.

Spread everything across the sheet pan and season with additional Creole or Cajun seasoning and salt, if needed. Use tongs to toss everything together well, then spread the mixture back into a single layer.

Place the pieces of butter evenly around the sheet pan.

Return the pan to the oven and bake for 15 minutes.

Remove the pan from the oven and stir everything together. Return to the oven and cook for an additional 10 minutes, or until the chicken is cooked through, the vegetables are tender, and the potatoes are roasted.

- Use your favorite seasoning. Any Cajun or Creole seasoning will work in this recipe. I used One Pot Momma Creole seasoning, but use whatever you love.

- Don't overcrowd the pan. Use a large, full-size sheet pan and spread everything into a single layer so the ingredients roast instead of steam.

- Make it your own. Broccoli is a great substitute for the green beans, and you can swap in other vegetables you have on hand.
