Andes Mint Poke Cake
This Andes Mint Cake started with a teacher’s birthday and a favorite candy list that included Andes mints. I knew I had to turn her favorite candy into a cake! This easy chocolate poke cake is made with devil’s food cake, hot fudge, sweetened condensed milk, a creamy mint topping, and plenty of chopped Andes mints.

This Andes Mint Cake came to life while I was prepping for a teacher’s birthday at my son’s school. She had a list of her favorite things, and when I saw Andes mints on her favorite candy list, I immediately thought, I have to turn that into a cake!
And honestly, I’m glad I did.
This starts with a simple box of devil’s food cake, but then it gets poked and filled with a rich chocolate peppermint mixture made with sweetened condensed milk and hot fudge. After the cake chills, it gets topped with a fluffy mint topping and a generous amount of chopped Andes mints.
It’s rich, chocolatey, minty, and incredibly easy to make. Plus, you can make it ahead of time and keep it refrigerated until you’re ready to serve.

- 1 box devil’s food chocolate cake mix
- Eggs, oil, and water called for on the cake mix box
- 1 can sweetened condensed milk
- 1 11-ounce jar hot fudge, warmed for 45 seconds
- 8 ounces Cool Whip, thawed
- Green food coloring
- 1 teaspoon peppermint extract, divided
- About 36 Andes mints, chopped
