❓ Frequently Asked Questions
Can I make lasagna soup ahead of time?
Yes! You can make the soup ahead of time, but for the best texture, I recommend cooking and storing the noodles separately if you aren't serving it right away. This keeps them from absorbing too much broth and becoming mushy.
Can I use a different type of pasta?
Absolutely! If you don't have lasagna noodles, you can substitute bowtie pasta, rotini, or another short pasta. The flavor will still be delicious!
Can I leave out the Italian sausage?
Yes! You can use 1 pound of ground beef instead of the combination of ground beef and sausage. You can also use all Italian sausage if preferred
Can I use fresh spinach?
Yes! Fresh spinach works great. Stir it into the soup during the last few minutes of cooking until wilted.
How do I store leftover lasagna soup?
Store leftover soup in an airtight container in the refrigerator for up to 3–4 days. Keep the cheese mixture in a separate container if possible.
How do I reheat lasagna soup?
Reheat leftovers on the stovetop over medium-low heat or in the microwave until warmed through. Add a splash of chicken broth if the soup has thickened as it sits.
Can I freeze lasagna soup?
Yes! For best results, freeze the soup before adding the noodles. Thaw overnight in the refrigerator, bring to a simmer, and cook fresh noodles when ready to serve. The ricotta cheese mixture is best made fresh.
