Chess Cake Bars
These easy Chess Cake Bars came from a friend back in 2012, and I actually still have the original email with the recipe! They disappear FAST every time I make them, and everyone always asks for the recipe. Little do they know, they are SO easy to make!

I got this recipe from a friend back in 2012, and yes, I actually found the email with the original recipe! These Chess Cake Bars have been a favorite ever since. They are one of those old-fashioned recipes that are incredibly easy to throw together, but everyone thinks you spent way more time making them than you actually did.
A buttery yellow cake crust topped with a sweet, creamy cream cheese layer and baked until golden. Add the pecans if you like a little crunch, then the hardest part is waiting for them to cool!
And trust me, they disappear fast. Every single time I make them, someone asks for the recipe.

- Cake Layer:
- 1 box yellow cake mix
- 1 egg
- 1 stick butter, softened
- 1 cup chopped pecans, optional
- Cream Cheese Layer:
- 1 (8 oz) package cream cheese, softened
- 1 box confectioners' sugar
- 2 eggs
- 1 teaspoon vanilla

- Let them cool completely: These need several hours to cool and set properly, so don't rush this part. Overnight is even better!
- Soften the cream cheese: Softened cream cheese will mix much more smoothly and give you a creamy topping without lumps.
- Don't skip the cooling time: They may look set when they first come out of the oven, but they need time to finish setting before you cut them.
- Add the pecans: The pecans are optional, but they add a really good crunch to the sweet, creamy bars.
