Shrimp Lasagna Roll Ups (From Food Network's 100 Cooks)
These Shrimp Lasagna Roll Ups are filled with creamy Boursin and ricotta cheese, tender Cajun-seasoned shrimp, and topped with a rich homemade Alfredo sauce and melted mozzarella. Inspired by my most requested dish from 100 Cooks, this comforting seafood pasta is packed with flavor and perfect for family dinners or special occasions.

If you've been following my journey on 100 Cooks, then you already know this is the recipe everyone has been asking for! Out of every dish I made on the show, these Shrimp Lasagna Roll Ups have been requested more than any other, and I'm so excited to finally share them with you.
The challenge on the show was the Cheesy Challenge, and the moment I heard it, I knew I wanted to lean into my Southern roots. Around here, we believe just about everything is better with cheese! I wanted to create something that was comforting, indulgent, and memorable while still showing the judges the type of cook I am.
That's where shrimp came in.
Growing up on the Gulf Coast, shrimp is what I like to call the "lobster of the South." It's fresh, flavorful, and something we proudly cook with all the time. I knew adding shrimp would elevate a classic cheesy lasagna without taking away from what the challenge was really about.
One piece of feedback from the judges was that the shrimp seemed to be the focus of the dish. I'll respectfully disagree. The shrimp is actually chopped into tiny pieces and folded into each lasagna roll so the cheese remains the star of every bite. Instead of overpowering the dish, the shrimp simply enhances the rich, creamy flavors and adds a little taste of the Gulf Coast.
The combination of creamy Boursin cheese, ricotta, homemade Alfredo sauce, melty mozzarella, and Cajun-seasoned shrimp creates one of the most comforting meals you'll ever make. It's rich without being heavy, cheesy without being overwhelming, and impressive enough for guests while still being easy enough for a weeknight dinner.

- Lasagna:

- 1 pound shrimp, peeled and deveined
- 1 tablespoon Tony Chachere's Cajun Seasoning
- 3 tablespoons butter
- 1 tablespoon minced garlic
- Alfredo Sauce:
- 3 tablespoons butter
- 1 tablespoon minced garlic
- 2 cups heavy whipping cream
- 1 cup grated Parmesan cheese
- 1 cup grated Asiago cheese
- Salt and black pepper, to taste
- Topping:
- 2 cups shredded mozzarella cheese
- Fresh chopped parsley

Cook the noodles: Bring a large pot of heavily salted water to a boil. Cook the lasagna noodles according to the package directions. Drain and lay the noodles flat on a clean surface so they don't stick together.

Make the filling: In a medium bowl, mix together the Boursin cheese, ricotta cheese, egg, garlic powder, and Tony's Cajun Seasoning until smooth.

Cook the shrimp: Toss the shrimp with Tony's Cajun Seasoning. Heat 3 tablespoons butter in a large skillet over medium-high heat. Add the garlic and cook for 30 seconds. Add the shrimp in a single layer and cook for 2 minutes per side, or until cooked through. Remove from the pan. Reserve 4–5 whole shrimp for garnish, then finely chop the remaining shrimp.

Make the Alfredo sauce: In the same skillet, melt 3 tablespoons butter over medium heat. Add the garlic and cook until softened, about 30 seconds. Stir in the heavy cream and heat until warm. Add the Parmesan and Asiago cheeses, stirring until melted and smooth. Season with salt and pepper to taste.

Assemble the roll-ups: Preheat the oven to 350°F. Spread half of the Alfredo sauce into the bottom of an 8x8-inch baking dish. Spread the cheese filling evenly over each lasagna noodle, then sprinkle with the chopped shrimp. Roll up each noodle and place seam-side down in the baking dish.

Add the sauce: Pour the remaining Alfredo sauce over the roll-ups and top with the shredded mozzarella cheese.

Bake: Cover with foil and bake for 5 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
